Probably the oldest food technology transferred from our northern ancestor, Nam has a unique way of preserving meat with unmatched flavour among other Thai dishes. The cottage industry still uses banana leaf to manually wrap the product while modern meat packers deploy automation to process Nam which is stuffed in hi-tech packaging tubes. Because Nam requires pork rind, during the festive seasons, it’s not unusual to witness a shortage of pork rind around the country.
